Stir Fry Pea Leaves with Dried Scallops
Ingredients
Pea leaves (0.5 Kg)
Dried scallop (2)
Chopped garlic (1 tablespoon)
Ginger (4 slices)
Salt (½ teaspoon)
Olive oil (2 tablespoons)
Hot water (½ cup)
Sauce ingredients
Water (½ cup)
Soya sauce (1 teaspoon)
Oyster sauce (1 tablespoon)
Corn starch ( 1 teaspoon)
Directions
1. Soak dried scallops in ½ cup of hot water for 1 hour and cover it with a lid.
2. Shred the dried scallops into small slices. Keep the soaking water.
3. Wash and drain pea leaves.
4. Mix sauce ingredients together and set aside.
5.Preheat the wok with 1 tablespoon of olive oil over high temperature. Once hot, put in chopped garlic and stir-fry pea leaves with salt until they are cooked.
6. Put pea leaves on a plate (without any water from the stir-frying).
7. If wok has cooled down, preheat it again with 1 tablespoon of olive oil and str-fry the ginger for a few seconds. Now put in the soaking water (kept from step 1) and the dried scallop. Lower the heat to medium and stir-fry for 1 minute.
8. Put sauce into the wok,cook until the sauce is thick and pour it on the plate of pea leaves (from step 6).
