Ginger and Scallion Chicken

 

Ingredients

 

Chicken breast without skin (200 grams)

Green onion (1 stalk)

Ginger (3 slices)

Olive oil (1 tablespoon)

 

Marinating ingredients

 

Soya sauce (1 tablespoon)

White pepper (¼ teaspoon)

Cornstarch (1 teaspoon)

Olive oil (½ tablespoon)

 

Sauce ingredients

 

Dark soya sauce (2 teaspoons)

Salt (1 teaspoon)

Cornstarch (1 teaspoon)

Sugar (¼ teaspoon)

Water (¼ cup)

 

Directions

 

1. Wash and cut chicken into slices.  

 

2. Mix chicken with marinating ingredients and set aside for 20 minutes. (Chicken breast can be replaced with other type of chicken meat.)

 

3. Wash, drain and cut green onion into 2-inch sections.

 

4. Mix sauce ingredients together and set aside.

 

5. Preheat the oil in a wok over high temperature.  Stir-fry ginger and green onion until golden.

 

6. Put in chicken and sauté until half cooked.

 

7. Add pre-mixed sauce, change to medium temperature.

 

8. Stir-fry until chicken is cooked and sauce is thick.  (Add more water if sauce is getting too thick before chicken is cooked.)
