Chow Mein with Beef in Black Bean Sauce

 

Ingredients A

 

Cantonese style steam noodles (½ lb)
Bean sprouts (100g)
Olive oil (3 tablespoons)

 

Ingredients B

 

Boneless sirloin (300g)
1 Green bell pepper
1 Red bell pepper
Chopped garlic (1 tablespoon)
Olive oil (1 tablespoon)
Water (¾ cup)
Thai chili (1 unit) [optional]

 

Marinating ingredients

 

Oyster sauce (1 tablespoon)
Olive oil (1 teaspoon)
White pepper (½ teaspoon)

 

Sauce ingredients A

 

Soya sauce (2 tablespoons)
Salt (½ tablespoon)

 

Sauce ingredients B

 

Black bean garlic sauce (1½ tablespoons)
Chili bean sauce (½ tablespoon)
Soya sauce (1 tablespoon)
Cornstarch (3 tablespoon)
Water (3 tablespoon)
Sugar (1 teaspoon)

 

Directions

 

1. Cut beef across grain into strips and marinate with marinating ingredients for 30 minutes.

 

2. Wash and drain peppers.  Remove seeds and cut them into squares (1x1 inch).

 

3. Wash and drain bean sprouts.

 

4. [Optional] Cut Thai chili pepper into small pieces.

 

5. Boil water and add in noodles to cook for 2 minutes.  Remove noodles from water and drain

.

6. Preheat 3 tablespoons of oil in a wok over high temperature and add in noodles sauce ingredient A (soya sauce - 2 tbsp and salt - ½ tbsp).

 

7. Stir fry noodles until half cooked and put in bean sprouts.

 

8. When noodles are cooked; remove noodles and bean sprouts from wok and place them in a plate.

 

9. Preheat 1 tablespoon of olive oil in a wok over high temperature; stir fry garlic, [Thai chili], peppers, black bean garlic sauce and chili bean sauce until sizzling and then add in the beef.

 

10. When beef is half cooked, add in water (¾ cup), soya sauce (1 tbsp), sugar and  peppers.

 

11. Quickly mix cornstarch and water (3 tbsp each) together and pour it in the wok.

 

12 Saute until beef is ready and sauce is thick and pour onto the noodles.
