Eggplant with Beef
Portion: 3 persons.
Ingredients
Eggplant (300g)
Beef (200g)
Chopped garlic (1 teaspoon)
Olive oil (1 tablespoon)
Marinating ingredients
Soya sauce (1 tablespoon)
Olive oil (½ teaspoon)
White pepper (¼ teaspoon)
Sauce ingredients
Oyster sauce (1 tablespoon)
Soya sauce (1 teaspoon)
Sesame oil (¼ teaspoon)
Cornstarch (1 teaspoon)
Water (½ cup)
Directions
1. Cut beef across grain into slices
2. Marinate beef with marinating ingredients for 30 minutes
3. Wash and drain eggplant(s). Remove the ends and cut them into thick strips (1cm x 1cm x 5 cm).
4. Pre-mix water (¼ cup) and corn starch. Set aside.
5. Preheat 1 tablespoon olive oil in a wok over high temperature; stir-fry garlic until sizzling, put in beef and oyster sauce.
6. When beef is half cooked, add in eggplant, water (¼ cup) and soya sauce.
7. Stir fry until eggplant is at desired softness, quickly remix the corn starch solution and add in.
8. Cook until sauce is thick, put in sesame oil and your dish is ready.
